In this video I show you how to make Traditional South African dish Tripe. You can enjoy this Tripe recipe with Pap or Samp.
TRIPE RECIPE | MOGODU/ Ulusu/ Matumbu | South African Traditional Food
Ingredients:
OX Tripe (use any tripe)
1 onion
1 bay leaf
1/2 green, red pepper
1 tsp medium curry powder
1 tbsp BBQ spice
1 tbsp crushed garlic & ginger
Salt & pepper to taste
1 tbsp mixed herbs
2 chopped tomatoes
2 beef stock cubes
1 thumb size ginger
Water to boil our tripe
Vinegar to wash our tripe

thank you for this recipe, i am def going to try it. Just one clarification. Did you use both beef and chicken stock or only chicken, The jug full of stock in the boiling process was chicken stock, and later you added a chicken cube to the pot. Can i make the same recipe with only beef stock?

We eat the tripe in Nigeria, but we clean it with hot water and take off the black sheet… its usually cleaner and has less smell.
I haven't had matumbu in years, looks delicious
