SORGHUM MAIZE POLENTA (UGALI)

INGREDIENTS 1 Kg Ugali Flour (A blend of maize and red sorghum), Enough water

(YIELDS 8 PORTIONS

PROCEDURE
1. Bring the water to the boil
2. Add half the flour and allow it to boil until it forms a volcano
3. Stir vigorously using a wooden spoon ensuring that you break all the lumps
4. Gradually add flour and mix to a stiff consistency
5. Reduce the heat and allow it to cook
6. Mould into the desired shape
7. Serve hot with vegetables and/or with a stew of your choice
8. Mix with sorghum flour and stir

    Ugali is nothing else than (mais)flour- pampe without any spices or butter or anything…!!! I must say that i am (a little bit) disappointed…!!!!

    Nutritive African bread made with African cereals.Did u know that u could make pasta from sorghum flour u just need to replace wheat flour by sorghum flour until the dough reach play dough consistency
